Roast Leg of Australian Lamb
Rubs 11/2 teaspoons dried rosemary
CLASSIC SEASONING 2 garlic cloves, minced
1 tablespoon olive oil Salt and black pepper, to taste
6 garlic cloves
Note: Cut small slits in leg
and push in garlic cloves
before placing in oven.
8 ounces Italian-seasoned
tomato paste or plain
1 teaspoon dried or 1 tablespoon
chopped fresh oregano
MUSTARD AND ROSEMARY 1 teaspoon dried basil
11/2 tablespoons Dijon mustard 2 garlic cloves, minced
1. Preheat oven to 350°F.
2. Combine ingredients for one of the rubs in a small bowl and
spread over 1 whole boneless leg (about 5 pounds).
3. Roast for about 1 hour and 20 minutes, or until the internal
temperature is 135°F to 140°F, for medium-rare. Remove from oven,
cover loosely with foil and let meat rest 10 to 15 minutes. Carve
and serve. Makes 8 to 10 servings.
