Alpine Italian Santa
Grape Tomato Salad
2 pounds Alpine Santa Variety*
grape tomatoes
1/2 cup julienned fennel
1/2 cup diced fresh mozzarella
3 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
1 tablespoon chopped parsley
Pinch of crushed red pepper
Salt and pepper
11. Combine tomatoes, fennel and
mozzarella.
2. Whisk together vinegar, olive oil,
parsley and red pepper.
3. Combine the dressing with the salad.
Season to taste with salt and pepper.
Makes 6 servings.

Mango Salsa
Alpine Asparagus
Parmesan
4 large Alpine* mangoes, chopped
Juice of 3 limes
1 bunch cilantro, finely chopped
1 large onion, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
11 bunch ( 2. 2 pounds)
Alpine* asparagus
2 1/2 tablespoons olive oil
3 tablespoons soft white
bread crumbs
5 tablespoons grated
Parmesan cheese
11. Toss mangoes with lime juice in a
large bowl.
1. Preheat oven to 350°F. Toss
asparagus in olive oil; place in
2. Add cilantro, onion, salt and pepper. a large greased baking dish.

8 servings. Sprinkle with bread crumbs
