Bow Tie Pasta and Chicken

4 tablespoons olive oil, divided 1/2 cup tomato sauce
Salt 1/4 cup grated Parmesan cheese,
1 16-ounce package plus more for garnish
bow tie pasta 2 tablespoons chopped fresh
2 Gold Kist Farms* boneless, skinless basil, plus more for garnish
chicken breasts, cooked 2 teaspoons chopped fresh Italian
8 asparagus spears, blanched parsley, plus more for garnish
2 tablespoons chopped garlic 1/2 teaspoon freshly ground
2 tablespoons chopped shallot black pepper
1 cup chopped tomato 3 tablespoons unsalted butter
1. In a large pot combine 2 quarts of water with 2 tablespoons of the olive oil
and a pinch of salt; bring to a boil. Add pasta and cook according to package
directions until tender. Drain pasta, place in a bowl and keep warm.
2. Break chicken into small pieces and set aside. Chop asparagus into
1-inch pieces and set aside.
3. In a medium pot, heat the remaining 2 tablespoons olive oil over
medium-high heat. Add chicken, asparagus, garlic and shallot; stir. Add
chopped tomato, tomato sauce, 1/4 cup Parmesan cheese, 2 tablespoons
basil, 2 teaspoons parsley, pepper and a pinch of salt; stir. Reduce heat to
low and let simmer for 10 minutes.
4. Add pasta to the pot and stir to combine. Add butter and stir until melted.
Spoon mixture onto a serving platter. Garnish with additional Parmesan
cheese, basil and parsley. Makes 4-6 servings.
Tip: Grate or crumble your own Parmigiano-Reggiano, pecorino or ricotta
salata cheese for a special flavor.
