Chicken with Apples and Brie

1 large egg
Salt and pepper
4 large chicken breast halves, boned, skinned and pounded thin
2 large Oneonta Starr Ranch Growers Granny Smith apples,
peeled, cored and sliced thin
1/2 pound Brie cheese, sliced thin
1 cup corn flakes, crushed
2. In a shallow bowl, beat egg with salt and pepper to taste; set aside.
3. Spread chicken breasts on a flat surface and fill with sliced apples and Brie.
Wrap up the ends and then the sides of the chicken to form bundles. Secure
4. Dip the bundles in egg wash and then roll in crushed corn flakes to coat.
Place seam side down in a baking dish.
5. Bake for 20-30 minutes, or until cooked through. Makes 4 servings.
Tip: Chicken can be prepared up to 1 hour ahead of time and refrigerated
until ready to bake.
