Mango Honey Chicken with
Dried Mango Slices

2 cups honey
1 8.4-ounce can Philippine Brand* mango nectar
1/2 cup light brown sugar
1/2 lemon, juiced
1 3- to 4-pound whole rotisserie chicken
12-14 ounces Philippine Brand* dried mango slices
Toothpicks, soaked in water for 10 minutes
1 bunch of basil, for garnish
1. Preheat oven to 450°F.
2. To prepare the glaze, combine honey, mango nectar, brown sugar and
lemon juice in a saucepan. Bring to a boil over medium-high heat and cook
until the sauce coats the back of a spoon, about 5 minutes.
3. Place chicken in a nonstick baking pan. Using a pastry brush, coat the
chicken with a generous amount of glaze.
4. Cover the chicken with dried mango slices, securing with toothpicks.
5. Bake the chicken until warmed through, about 12 minutes. Remove from the
oven and discard the toothpicks. Garnish with fresh basil. Makes 4-6 servings.

Cheesy Chicken Tetrazzini

1/4 cup unsalted butter
3/4 pound mushrooms, sliced
2 garlic cloves, minced
Salt and pepper
1/4 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half or whole milk
3 tablespoons dry sherry
4 cups ( 16 ounces) shredded
Tillamook* sharp or medium
Cheddar cheese
1/2 pound penne pasta,
cooked, drained
4 cups cooked chicken torn into
bite-size pieces
1 1/2 cups toasted fresh
bread crumbs
1. Preheat oven to 350°F.
2. Melt butter in a large saucepan over medium-high heat. Add mushrooms,
garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper. Sauté until liquid evaporates,
about 12 minutes.
3. Reduce heat to medium. Sprinkle in flour and cook, stirring, for 1 minute.
Gradually add broth and half-and-half, stirring until blended. Reduce heat
and simmer until thickened, 3-5 minutes.
4. Remove from heat. Add sherry and 3 cups cheese, stirring until cheese
melts. Add 1/4 teaspoon salt and 1/8 teaspoon pepper. Stir in pasta and
chicken. Pour into a buttered shallow 3-quart baking dish.
5. Mix remaining cheese and bread crumbs; sprinkle over casserole.
6. Bake, uncovered, until the sauce bubbles and the top is lightly browned,
35-40 minutes. Makes 8-10 servings.
