Grilled Sausage Sandwiches with
Peppers and Onions

2 tablespoons olive oil
1 large white onion, thinly sliced
1 1/2 red bell peppers, thinly sliced
1/2 teaspoon kosher salt
Freshly ground black pepper
1 pound mild or hot Italian sausages ( 4 sausages)
4 La Brea Bakery Ciabatta Sandwich Rolls
1-2 ounces freshly grated Parmesan cheese (optional)
1. Preheat oven to 375°F.
2. In a sauté pan, heat olive oil over moderate heat until the pan is hot but not
smoking. Add onions, bell peppers, salt and pepper to taste. Cook, stirring, until
peppers are softened and onions are golden brown.
3. Using a grill pan or a large skillet, grill sausages over medium-high heat,
turning them on each side for 5-8 minutes, or until cooked through. Halve
the sausages lengthwise.
4. Slice rolls in half. Place sausage, onions and peppers on the bottom half
of each roll. Sprinkle with Parmesan. Cover each sandwich with the top half
of the roll.
5. For best results, heat the sandwiches in the oven for 10 minutes for all
the flavors to combine. Makes 4 servings.
