Classic Iceberg Salad
with Thousand Island Dressing

1/4 cup mayonnaise or salad dressing
1/4 cup dairy sour cream
1 tablespoon pickle relish
1 tablespoon ketchup
1 tablespoon prepared mustard
1/4 teaspoon granulated sugar
1/4 teaspoon lemon juice
1/4 teaspoon cider vinegar
1 head Foxy* iceberg lettuce
2 medium tomatoes
1. In a small bowl, combine mayonnaise, sour cream, relish, ketchup,
mustard, sugar, lemon juice and vinegar. Beat with a wire whisk until
well blended.
2. Remove core from lettuce; cut lettuce into 6 wedges. Place each
wedge on a salad plate.
3. Cut each tomato into 6 wedges. Arrange 2 wedges on each plate.
4. Spoon some dressing over each lettuce wedge. Pass the remaining
dressing around. Makes 6 servings.

Classic “Cutie” Clementine Salad

6 ounces packaged baby spinach
3 Cuties* California clementines, peeled and sectioned
1/2 cup black olives, sliced
1/2 cup sliced red onion
1/2 cup prepared balsamic vinaigrette
1/4 cup crumbled feta cheese
1. Combine spinach, clementines, olives and onion in a large serving bowl.
2. Pour vinaigrette over the salad and toss to coat evenly.
3. Top with crumbled feta. Makes 2-4 servings.
Tip: Garnish the plates with Cuties segments to show off the vibrant
orange color.
