the plank on the grill. Close the barbecue lid, and let the planking begin.

Check every four to five minutes to see that the plank is not on fire. If there is a fire, be sure to use a spray bottle of water to put out the flames, and reduce the heat to medium-low.

When the food is cooked, carefully remove the plank from the grill, place on a serving platter and enjoy.

Let the plank cool before discarding. Use a plank only one time, as reusing a plank can transfer unwanted flavors or create a bitter smoke taste. However, I usually use my planks twice—once on the grill and a second time in the fireplace.
