German Apple Pancake

APPLE TOPPING
1/4 cup butter or margarine
2 cups peeled, thinly
sliced apples
1/4 cup sugar
1/2 teaspoon ground
cinnamon
PANCAKE BATTER
1 cup Krusteaz Buttermilk
Complete Pancake Mix
3/4 cup water
1/2 teaspoon vanilla extract
1/2 teaspoon ground
cinnamon
To prepare the topping, place butter in a 9-inch
microwave-safe pie pan. Microwave on high for
45-60 seconds, or until butter is melted. Stir in
apples, sugar and cinnamon. Cover and microwave
on high for 3-4 minutes, or until apples are tender.
To prepare the batter, place pancake mix, water,
vanilla and cinnamon in a medium bowl and
blend with a wire whisk. Pour evenly over the
cooked apples.
Microwave, uncovered, on high for 3-5 minutes, or
until a toothpick inserted in the center comes out
clean. Let stand for 3-5 minutes, then invert onto a
serving plate. Optional serving suggestion: Sprinkle
with additional cinnamon and confectioners’ sugar.
Makes 6-8 servings.
Tip: To use a conventional oven, preheat to 350°F.
Prepare apple topping as directed. Bake, uncovered,
for 10 minutes, or until apples are tender. Prepare
pancake batter and pour evenly over the cooked
apples. Bake, uncovered, for 13-15 minutes, or until a
toothpick inserted in the center comes out clean.
Banana-Carrot Loaf (Low-Fat)

Nonfat cooking spray
3/4 cup All-Natural Tree
Top* apple sauce
1 cup sugar
2 eggs or 4 egg whites
1 3/4 cups flour
1 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground
cinnamon
1 cup grated carrots
1 cup mashed bananas
(about 3)
Preheat oven to 350°F. Coat a 9-by-5-inch loaf pan
with cooking spray.
In a medium-sized mixing bowl, combine apple
sauce, sugar and eggs; beat until light and fluffy.
In a separate bowl, combine flour, salt, baking soda,
baking powder and cinnamon. Add to the batter and
blend well.
Fold carrots and bananas into the batter.
Pour batter into the prepared pan. Bake for 60-65
minutes, or until a toothpick inserted in the center
comes out clean. Makes 10 servings.
Tip: Dust lightly with confectioners’ sugar or
spread with whipped low-fat cream cheese and
chopped nuts.
