Harvest Spring Salad with
Cranberries and Walnuts

6 cups Taylor Fresh
Organic* Spring
Mix Organic
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/2 cup feta cheese
DRESSING
1/2 cup olive oil
3 tablespoons red
wine vinegar
1 tablespoon lemon juice
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 tablespoon
minced shallot
In a large bowl, combine spring mix, walnuts, dried
cranberries and feta.
To prepare the dressing, combine all ingredients in a
small bowl, stirring well with a whisk.
Pour the dressing over the salad and toss to coat.
Makes 6-8 servings.

Curried Chicken Strawberry Salad
Naturipe Farms
1 tablespoon butter
1 tablespoon curry powder
2 tablespoons sour cream
Juice of 1 lime
1 tablespoon honey
2 cups shredded
cooked chicken
1/3 cup sliced celery
1 cup cubed Naturipe
Farms* strawberries
Salt and pepper
Salad greens or bread
Melt butter in a small saucepan over medium-high
heat. Add curry powder and cook until fragrant,
stirring constantly. Remove from the heat and stir in
sour cream, lime juice and honey.
Combine chicken and celery in a bowl. Pour curry
dressing over meat and stir to coat evenly. Add
strawberries and stir gently to combine. Season to
taste with salt and pepper.
Serve over salad greens or on fresh bread.
