Spicy Cold Ginger Mango
Tango Chicken Salad
Odwalla
2 tablespoons chopped
fresh ginger (leave
skin on)
1/2 teaspoon salt
3/4 cup Odwalla
Mango Tango Fruit
Smoothie Blend
1 cup Odwalla*
Summertime
Lime Limeade
1 garlic clove, smashed,
then chopped
1 whole boneless,
skinless chicken
breast (or thighs)
1 head butter lettuce
3 green onions, thinly
sliced on the diagonal
1 carrot, grated or thinly
sliced on the diagonal
In a nonreactive bowl, stir together ginger, salt,
Mango Tango, Summertime Lime and garlic. Add
chicken and marinate for 20 minutes to 2 hours.
Pour off marinade into a small saucepan and simmer
until it is reduced by half. Let cool.
Grill the chicken. Place in a storage container and let
cool. Pour cooled marinade over cooled chicken and
its juices. Refrigerate overnight.
Just before serving, remove chicken from the
marinade and slice on the diagonal into thin strips.
Arrange lettuce on plates. Place chicken on lettuce,
then top with green onions and carrots.
Stir the marinade and adjust seasoning to taste. Thin
with water if it’s too spicy. Spoon a little over each
serving. Makes 4 servings.

Chicken Salad with Avocado
Chilean Hass Avocados
3 ounces cream
cheese, softened
1/3 cup plain yogurt
1 celery stalk,
finely chopped
1 tablespoon
Dijon mustard
1 1/2 tablespoons finely
chopped chives, green
onion, dill or basil
(reserve 1 teaspoon
for garnish)
1/2 teaspoon salt
1/2 teaspoon grated
lemon peel
1 teaspoon lemon juice
1 cup diced cooked
chicken (from deli-
roasted chicken)
3 Chilean Hass avocados
In a medium bowl, beat cream cheese. Add yogurt
and mix until smooth. Stir in celery, mustard, chives,
salt, and grated lemon peel and juice; mix until
blended. Stir in chicken. Cover and chill until ready
to serve.
To serve, rinse avocados. Cut in half. Gently lift out pit
with a spoon. Spoon about 1/3 cup chicken salad into
each avocado half. Garnish with a sprinkling of chives.
Makes 6 servings.
Tip: If you wish, using a spoon, lift the avocado out
of the peel before filling.
