Potato-Crusted Mushroom “Galettes”

1 ounce dried porcini
mushrooms
4 teaspoons olive oil
1 1/2 pounds fresh wild and
domestic mushrooms,
cleaned and quartered
1/4 cup diced shallots
2 teaspoons chopped garlic
2 teaspoons flour
Salt, white pepper
and nutmeg
3 pounds Wisconsin*
russet potatoes
1/3 cup vegetable oil
Chopped chives
Preheat oven to 400°F.
Soak porcini in 1 1/3 cups very hot water until softened.
Strain, reserving liquid. Strain liquid; rinse porcini and
cut in 1/2-inch pieces.
Heat olive oil in large sauté pan; add fresh mushrooms,
shallots and garlic. Sauté until mushrooms start to
soften; stir in flour. Add porcini and soaking liquid;
simmer until sauce just coats mushrooms. Season
with salt, pepper and nutmeg. Let cool.
Cut potatoes in thin lengthwise slices. Blanch in boiling
water just until flexible; drain. Lay slices on a towel.
Brush 8 4 1/2-inch nonstick tartlet molds with
removable bottoms with vegetable oil. Line bottoms
of molds with 1 layer of potatoes. Arrange overlapping potato slices in molds, letting them hang over
the sides. Brush with oil.
Place 1/2 cup mushroom mixture in each mold; fold
over potato slices to cover. Brush with oil, place on a
sheet pan and bake for 45 minutes, or until edges are
golden. Cool slightly, unmold and sprinkle with
chives. Makes 8 servings.

mushroom soup
3/4 cup milk
1 2.8-ounce can French
fried onions, divided

Bacon, chopped
and divided
1/8 teaspoon pepper
Preheat oven to 350°F.
In a medium bowl, stir together beans, soup, milk,
half of the onions, half of the bacon topping and
pepper. Spoon into a 1 1/2-quart casserole.
Bake for 30 minutes. Top with remaining onions and
bacon. Bake 5 minutes longer. Makes 6 servings.
