SOUTHWESTERN BUTTER
1/2 cup ( 1 stick) butter or margarine,
softened to room temperature or
spreadable consistency
2 teaspoons chili powder
3/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 drops Tabasco sauce
Combine all ingredients with a fork until well blended. Serve with warmed corn
muffins and chili or ribs. Makes 8 servings.
CRANBERRY ORANGE BUTTER
1/2 cup ( 1 stick) butter or margarine,
softened to room temperature or
spreadable consistency
2 tablespoons frozen orange
juice concentrate
1/4 cup finely chopped sweetened
dried cranberries
Combine all ingredients, blending well with a fork. Serve with warmed corn muffins
at Thanksgiving. Makes 8 servings.
MAPLE BUTTER
1/2 cup ( 1 stick) butter or margarine,
softened to room temperature or
spreadable consistency
2 tablespoons pure maple syrup
Combine butter and syrup, mashing together with a fork until well blended.
Serve with warmed corn muffins for breakfast or anytime. Makes 8 servings.
Scalloped Potatoes
Tillamook
2 tablespoons Tillamook*
butter, softened
and divided
1 cup ( 4 ounces) shredded
Tillamook* Vintage
White Extra Sharp
Cheddar Cheese
1 cup ( 4 ounces) shredded
Tillamook* Sharp
Cheddar Cheese
3 cups half-and-half
1 teaspoon salt
1/4 teaspoon freshly
ground pepper
2 1/2 pounds russet
potatoes (about
4 medium)
Preheat oven to 350°F.
Butter a 13-by-9-inch baking dish with 1 tablespoon
butter. In a small bowl, combine cheeses; set aside.
In a 4-quart saucepan, combine half-and-half, salt
and pepper.
Peel potatoes and slice 1/16 inch thick. Add to the
saucepan and bring just to a simmer. Carefully pour
the potato mixture into the prepared baking dish.
Distribute potatoes evenly in the pan and sprinkle
with cheese. Dot the top with small pieces of the
remaining butter.
Bake for 45 minutes, or until the potatoes are done
and the top is golden. Let rest for 10-15 minutes
before serving. Makes 8 servings.
