Spinach, Chicken and Apple Salad

2 tablespoons red
wine vinegar
1 teaspoon Dijon mustard
3/4 teaspoon salt
1/4 teaspoon freshly ground
black pepper
1/3 cup vegetable oil
1 pound ( 9-10 cups)

1/2 pound smoked chicken
breasts, sliced
1 6-ounce bag Prize
Slice* organic sliced
apples, chopped
3/4 cup chopped walnuts
1/3 pound sliced bacon,
cooked and crumbled
1 small red onion,
finely chopped
In a small bowl, whisk together vinegar, mustard,
salt and pepper. Slowly add oil and continue to
whisk until blended. Set aside.
In a large bowl, combine spinach, chicken, apples,
walnuts, bacon and red onion. Add dressing just
before serving and toss well. Makes 4 servings.
Tip: Use smoked turkey breast instead of chicken or
sliced almonds instead of walnuts.

Fresh Blueberry Fennel Salad
Naturipe Farms
1 1/2 cups Naturipe
Farms* fresh
blueberries
1/2 cup chopped cucumber
1/2 cup diced fresh
pineapple
1/2 cup very thinly sliced
fresh fennel
( 1 small bulb)
2 cups cooked orzo
pasta, cooled
1 1/2 teaspoons
rice vinegar
1 teaspoon toasted
sesame oil
1 teaspoon toasted
sesame seeds
Salt and pepper to taste
Combine all ingredients in a large bowl.
Serve cold or at room temperature. Makes 6 servings.
Tips: Add 1 cup diced cooked chicken. Serve with
fresh salad greens.
