Mixed Baby Greens Salad with
Oranges, Pecans and Blue Cheese

6 cups (tightly packed,
approx. 5 ounces)

Organic Mixed Baby
Greens Organic
2 oranges, peeled, segmented,
juice reserved
1/2 cup pecans, toasted and
coarsely chopped
2 ounces blue cheese,
crumbled
DRESSING
1 teaspoon minced shallot
1/2 teaspoon minced garlic
1 tablespoon red
wine vinegar
1 tablespoon orange juice
2 tablespoons olive oil
2 tablespoons canola oil
1 teaspoon salt
1/4 teaspoon ground pepper
Place salad greens in a large bowl.
In a separate small bowl, whisk dressing
ingredients together until well blended.
Add the dressing to the salad greens a little at a
time and toss lightly.
Top with orange segments, pecans and blue
cheese. Serve immediately. Makes 4 servings.

Harvest Basket Apple Crisp

2 6-ounce bags (total
12 ounces) Earthbound
Farm* Organic Apple
Slices Organic
2 tablespoons flour
2 teaspoons ground
cinnamon
1/2 cup sugar
3 tablespoons butter, melted
TOPPING
1/2 cup flour
3 tablespoons brown sugar
1/4 cup old-fashioned oats
3/4 teaspoon ground
cinnamon
Pinch of salt
3 tablespoons butter, cut
into small pieces
3 tablespoons coarsely
chopped walnuts
Vanilla ice cream or whipped
cream (optional)
Preheat oven to 350°F.
To prepare the filling, prick apple slices with a
fork. Combine flour, cinnamon and sugar in a
mixing bowl. Add apples and stir to coat well.
Add melted butter, mixing until well covered.
Pour into a shallow 9-inch square baking dish.
Cover with foil and bake for 40 minutes.
To prepare the topping, mix all ingredients
together by hand, until the mixture is crumbly.
Remove the apple filling from the oven, remove
the foil and cover apples evenly with the topping.
Bake, uncovered, for an additional 20 minutes.
Serve with ice cream or whipped cream.
