Roasted Garlic Prime
Rib Roast with Fennel
Kirkland Signature/ Tyson
2 fennel bulbs
4 medium carrots,
peeled and cut into
1-inch chunks
1 large white onion, cut
into 1-inch chunks
1 tablespoon olive oil
1 Kirkland Signature
prime rib beef roast,
3 1/2-4 pounds
Salt and black pepper
2 tablespoons whole
fennel seeds, toasted
1/4 cup prepared roasted
garlic puree
2 cups beef broth
Preheat oven to 350°F.
Remove tops of fennel bulbs and reserve. Cut the
bulbs into 1 1/2-inch chunks. Combine with carrots
and onions in a roasting pan. Toss with olive oil.
Season the roast with salt and pepper to taste.
In a small bowl, combine toasted fennel seeds with
roasted garlic puree. Spread the mixture over the top
of the roast. Place the roast on top of the vegetables.
Cook, covered, for 1 1/2 hours. Uncover and cook
until desired doneness is reached. Remove beef to
a carving board and let it rest for 20 minutes
before carving.
Thirty minutes before the roast is done, prepare
the fennel sauce: Cut reserved fennel bulb tops into
1 1/2-inch pieces. Combine with beef broth in a small
saucepan. Simmer for 30 minutes. Strain. Serve the
sauce with the roast. Makes 4 servings.

3 pounds boneless beef
chuck roast (about
2 inches thick)
2 teaspoons McCormick*

Steak Seasoning
1 cup beef broth
1/2 teaspoon dried
basil leaves
1/4 teaspoon dried
oregano leaves
1/4 teaspoon dried
thyme leaves
4 small potatoes, peeled
and halved
4 carrots, cut into
1-inch pieces
1 medium onion, cut
into wedges
Flour for thickening
(optional)
Preheat oven to 350°F.
Place roast in a 3-quart baking dish. Sprinkle with
steak seasoning.
Mix beef broth, basil, oregano and thyme; pour over
the meat. Cover.
Bake for 1 1/2 hours.
Place potatoes, carrots and onion in the pan around
the roast. Cover and bake for 1 1/2 hours longer, or
until the roast is tender.
Slice the roast across the grain. Arrange on a serving
platter with the vegetables. If desired, thicken pan
juices with flour before serving. Makes 8 servings.
