Fettuccine with Roasted Chicken
and Lemon Cream Sauce

1 pound boneless, skinless
chicken thigh meat
2 tablespoons olive oil,
plus more for
coating chicken
Salt and pepper
1 pound fettuccine noodles
2 tablespoons minced garlic
1 small shallot, minced
1/2 cup dry white wine

2 cups heavy cream
1/2 bunch Italian
parsley, chopped
Juice and grated peel of
1 lemon
1/2 cup grated Parmigiano-
Reggiano cheese
Preheat oven to 350°F.
Place chicken in a roasting pan and thinly coat with
olive oil. Season to taste with salt and pepper. Roast
chicken for 45 minutes, or until cooked. Let cool and
shred/slice into thin strips.
Prepare pasta according to package directions.
In a large sauté pan, heat 2 tablespoons olive oil over
medium-high heat. Add garlic and shallots and sauté,
taking care not to brown. Add wine and cook until
reduced by half. Add chicken broth and cream;
simmer over medium-high heat, stirring occasionally,
until the sauce begins to thicken.
Add chicken, parsley, lemon juice and grated peel,
and salt and pepper to taste.
Combine with pasta. Serve with grated Parmigiano-Reggiano. Makes 4 servings.

King Crab Fettuccine

1 pound Oyster Bay Brand*
frozen king crab legs
and claws, thawed and
drained ( 6-8 ounces
crabmeat)
1/2 cup butter or margarine
1 garlic clove, minced
3/4 cup heavy cream
1/2 cup grated
Parmesan cheese
1/2 teaspoon freshly
ground black pepper
12 ounces fettuccine
pasta, cooked
and drained
1 tablespoon chopped
fresh parsley
Salt
Slice crab legs and claws lengthwise and cut into
small pieces. Remove the meat from the shells.
Melt butter in a saucepan over medium heat. Add
garlic and sauté until lightly browned. Blend in
crabmeat, heavy cream, Parmesan and black pepper.
Cook, stirring gently, until thoroughly heated.
Add the crab mixture to the cooked fettuccine and
toss lightly. Garnish with parsley. Add salt to taste.
