Veggie Quiche
Eat Smart
1 prepared 9-inch piecrust
2 tablespoons Dijon-
style mustard
2 1/2 cups Eat Smart*
broccoli florets
1 cup shredded Swiss cheese
1/3 cup chopped
green onions
3 eggs
1 cup milk
Salt and pepper (optional)
Preheat oven according to piecrust package directions.
Spread mustard on the bottom and sides of the
piecrust. Bake for 10 minutes. Remove from the oven.
Place broccoli, cheese and green onions in the
piecrust, mixing well.
In a small bowl, combine eggs, milk, and salt and
pepper to taste. Pour over the vegetable mixture.
Bake in a 400°F oven for 35-40 minutes, or until the
center is set and the top is browned. Let stand for 20
minutes before cutting. Makes 4-6 servings.

Famous Mushroom Quiche
Cardile Brothers
1 unbaked 9-inch pie shell
4 cups sliced fresh Cardile
Brothers* mushrooms
1 tablespoon butter
1 cup shredded
Swiss cheese
2 tablespoons flour
3 eggs, lightly beaten
1 1/4 cups milk
1 tablespoon minced
fresh parsley
1 teaspoon garlic salt
1/2 teaspoon pepper
Preheat oven to 425°F.
Bake pie shell for 10 minutes; remove and let cool.
Reduce oven heat to 350°F.
Sauté mushrooms in butter over medium-high heat
until tender. Remove from the pan with a slotted
spoon and set aside.
In a bowl, toss cheese with flour; add eggs, milk,
parsley, garlic salt and pepper. Stir in mushrooms.
Pour into the crust.
Bake for 1 hour, or until set, covering edges with
foil to prevent overbrowning, if needed. Let stand
for 10 minutes before cutting. Makes 6 servings.
