Cantaloupe and Blueberry Parfaits
Del Monte Fresh Produce
6 tablespoons nonfat lemon yogurt
1/4 cup fat-free sour cream
2 cups cubed Del Monte* cantaloupe
1 cup blueberries
4 mint sprigs
Mix yogurt and sour cream.
Layer 1/2 cup cantaloupe, 1/4 cup blueberries and 2 1/2 tablespoons yogurt
mixture in each of four 8-ounce glasses. (Stemmed glasses add an elegant touch).
Garnish with fresh mint sprigs. Makes 4 servings.
