No-Bake S’more Pie

CHOCOLATE
COOKIE CRUST
1 1/2 cups crumbled Kirkland
Signature chocolate
chunk cookies
2-3 tablespoons
granulated sugar
1/4 cup butter
FILLING
3 cups miniature
marshmallows
1/2 cup light cream
1 cup dairy whipped cream
1 dark milk chocolate
candy bar
1/4 cup graham
cracker crumbs
To prepare the crust, combine all ingredients in a
9-inch glass pie plate. Heat on high in the microwave
for 2 minutes, stirring once. Press evenly onto the
bottom and sides of the dish. Heat on high for 1
minute to set the crust. (This can be made in advance
and frozen.)
To prepare the filling, combine marshmallows and
cream in a 2-quart glass bowl. Microwave on high for
2-2 1/2 minutes, or until marshmallows puff. Stir well
to blend evenly. Chill for 20-25 minutes, or until thickened but not set.
Fold in whipped cream. Pour into the crust. Top
with shavings from the candy bar and graham
cracker crumbs. Chill for 4-5 hours before serving.

Chocolate Crumb Cream Pie

1/2 cup plus 1 quart
milk, divided
1 1/2 tablespoons gelatin
1 1/2 cups sugar, divided
3/4 cup cornstarch
4 ounces Callebaut
unsweetened
baking chocolate
5 egg yolks
1/4 teaspoon salt
1 tablespoon vanilla
extract
1 cup whipped cream
2 prebaked 9-inch
pie shells
Callebaut semisweet
chocolate shavings,
for garnish
2 large Kirkland Signature
chocolate chip cookies,
crumbled, for garnish
Combine 1/2 cup milk and gelatin; set aside.
Place 1 quart milk and 3/4 cup sugar in a saucepan
and bring to a boil.
Combine the remaining 3/4 cup sugar and cornstarch,
using some of the milk to form a paste. Whisk into
the boiling milk.
Add unsweetened chocolate and stir until it melts.
Place egg yolks in a bowl and whisk. Whisk in a little
of the hot chocolate mixture and then stir eggs into
the saucepan. Remove from the heat and let sit for
3 minutes.
Stir the gelatin mixture into the chocolate mixture.
Pour into a bowl that is placed on a bed of ice. Stir in
salt and continue stirring until completely cool.
Add vanilla. Fold in whipped cream.
Fill the pie shells with the mixture. Decorate with
chocolate shavings and crumbled cookies.
Makes 20 servings.
