Coffee Pumpkin Bread
with Coffee Icing
Starbucks Coffee
1 14-ounce package pumpkin quick
bread mix
1 1/4 cups brewed double-strength
Starbucks coffee, any variety,
cooled, divided
4 squares ( 4 ounces) semisweet
baking chocolate,
coarsely chopped
3 cups confectioners’ sugar
2 tablespoons butter or
margarine, melted
Prepare bread batter as directed on the package, substituting 1 cup of the coffee for
the water. Stir in chocolate.
Bake bread as directed on the package. Remove from the pan; cool completely.
Beat sugar, remaining 1/4 cup coffee and butter in a large bowl with an electric mixer
on low speed until well blended. Spread on the bread. Makes 16 servings.
