Asparagus, Bell Pepper
and Basil Egg Tart

1/3 cup cold butter, cut
into small pieces
1 cup all-purpose flour
2-3 tablespoons
cold water
1 cup shredded
Cheddar cheese
1/2 pound asparagus
spears, cut into
2-inch pieces
1/2 medium red bell pepper,
cut into thin strips
1/4 cup chopped fresh basil
1 cup ( 8 ounces) Kirkland
Signature* Egg Starts
1 cup half-and-half
1/4 teaspoon salt
1/8 teaspoon
ground pepper
2 tablespoons pine nuts
Preheat oven to 450°F.
With a pastry blender, cut butter into flour until the
mixture resembles coarse crumbs. Slowly add cold
water until the dough forms a ball. On a lightly
floured surface, roll the dough into a 12-inch circle.
Press into an ungreased 10-inch tart pan with a
removable bottom. Line the crust with aluminum
foil and pie weights. Bake for 8 minutes, or until
lightly browned.
Reduce oven temperature to 400°F.
Sprinkle the crust with cheese. Top with asparagus,
bell pepper and basil.
In a bowl, combine Egg Starts, half-and-half, salt and
pepper. Pour over the vegetables. Top with pine nuts.
Bake for 30-35 minutes, or until set in the center.
Makes 8-10 servings.
Tip: Dried beans can be used for pie weights.

10 eggs, lightly beaten
3 cups milk
2 teaspoons dry mustard
1 teaspoon salt
6 cups cubed bread
1/2 teaspoon ground
black pepper
2 cups shredded sharp
Cheddar cheese
1/2 cup sliced mushrooms
(optional)
1 medium tomato, seeded
and chopped (optional)
1/2 cup thinly sliced green
onions (optional)
Preheat oven to 325°F.
In a large skillet, cook sausage over medium-high
heat, stirring frequently, until thoroughly cooked and
no longer pink.
In a large mixing bowl, combine eggs, milk, mustard
and salt; stir well.
Distribute half the bread cubes evenly in a buttered
13-by-9-by-2-inch baking dish. Sprinkle with half the
pepper, half the cheese, half the sausage and half of
each optional ingredient. Repeat layering using
remaining bread cubes, pepper, cheese, sausage and
optional ingredients. Pour the egg mixture evenly
over the casserole.
Bake, uncovered, for 55-60 minutes, or until the eggs
are set. Tent with foil if the top begins to brown too
quickly. Makes 6 servings.
