1/2 cup fresh
bread crumbs
4 tablespoons butter,
softened
2 tablespoons finely
chopped red bell pepper
2 tablespoons finely
chopped fresh parsley
1 tablespoon finely
chopped green onions
1/2 teaspoon cayenne
pepper

6 bacon slices, cooked crisp
and crumbled
Preheat the broiler.
Combine bread crumbs, butter, bell pepper, parsley,
green onions and cayenne pepper in a bowl;
blend well.
Shuck clams, leaving loosened clam meat in one half
of the shell; discard the other half.
Place clams on the half shell in a baking dish and
cover each with about 1 teaspoon of the bread-crumb mixture.
Broil clams 4-6 inches from the heat for 3-4 minutes,
or until browned.
Garnish with bacon and serve immediately.

Seared Ahi Tuna Appetizer

3/4 cup soy sauce
1/2 cup pineapple juice
1 teaspoon wasabi powder
1 tablespoon toasted
sesame oil
2 Western United Fish
Company* ahi
tuna steaks
Canola oil
Green leaf lettuce
In a small bowl, combine soy sauce, pineapple juice,
wasabi and sesame oil for the marinade.
Cut ahi steaks into 2-by-2-inch portions. Place in the
marinade and refrigerate for 10 minutes.
Preheat grill to high and brush with canola oil. Grill
ahi for 2 minutes per side, or until seared.
Cut ahi into 1/4-inch strips and arrange on a bed of
lettuce. Serve immediately. Makes 4-6 servings.
