WHEN IT COMES TO fresh foods,
Costco buyers are always looking
for the best products to carry the
Kirkland Signature label. One product
that perfectly exemplifies this demand
for excellence is the pork loin baby
back ribs found in the warehouse
meat departments.
The ribs have gone through a
series of improvements over the past
several years, explains Costco meat
buyer Scott Alleger. The first was
changing the cut to ensure an extra-meaty rib. That means the right amount
of meat on each rib portion.
Another improvement was removing the skin (commonly called silver
skin) from the inside of the ribs, Scott
explains. Home chefs typically have to
remove this skin, usually with a pliers,
because it curls the rib when cooked,
becomes chewy and adds nothing
to the taste.
“Above all,” Scott adds, “Costco’s
baby back ribs are always fresh, never
frozen.”
It all adds up to a fresh cut of meat
that is easy to prepare and cooks
evenly on the grill. And it’s available at
a great value. Costco’s price is significantly less per pound than baby back
ribs in a grocery store—which often
don’t have the skin removed and have
been frozen.
“Right now I think it’s as fine a
baby back rib as you can get,” says
Scott. “It’s a great piece of meat.”—TT

the industry,” says buyer Greg Shavey. “We
were the first to move from a tub to individual
packages with a dispenser on top.”
Other innovations have included adding
aloe in 1997 and using a pop-up dispensing
system, which allows members to pull one
wipe at a time. It’s also worth noting that
Costco was the first to market cloth-like
“spun-lace” baby wipes, in 2001, and cotton-blend wipes, in 2005.
The latest change, introduced in July of
this year, is a switch to wipes made from
Tencel. It’s a proprietary fiber, which means

nothing new but time and babies. It’s a silly
joke, but it’s right about babies—well, make

wipes have maintained their size, compared to
the industry standard of reducing size. Also,
each of the packs has a bar code so that small-shop owners can resell the packages.
