Great Grape Baby Green Salad

12 cups mixed
baby greens
2 cups Delano Farms red,
green or black seedless
grapes, cut in half
1/4 cup walnut pieces
3 ounces (about 3/4 cup)
crumbled reduced-fat
blue cheese
6 tablespoons light
balsamic vinaigrette
or light honey
mustard dressing
(I used Newman’s Own
light balsamic)
1 pound grilled boneless,
skinless chicken breast
strips or shredded
rotisserie chicken
Place greens, grapes, walnuts and cheese in a
large glass or plastic mixing bowl. Add dressing
and toss well.
Divide the salad among 4 serving plates and top each
with equal portions of chicken. Serve immediately.
Makes 4 entrée-sized servings.

Prosciutto-Wrapped Grapes

4 1/2 ounces very thinly
sliced prosciutto, cut
into 36 strips (about
1 1/2 inches wide
by 3 inches long,
if possible)
36 Delano Farms black
seedless grapes
36 decorative toothpicks
Wrap a strip of prosciutto around each grape.
Arrange on a large plate or platter and place a toothpick in the center of each grape. Serve immediately.
