Tomato and Bagel Salad
Einstein Brothers Bagels/Noah’s Bagels
2 medium tomatoes, halved
1 tablespoon chopped shallots
2 tablespoons chopped garlic
1/4 cup red wine vinegar
1/2 cup olive oil
2 teaspoons salt
1 teaspoon freshly ground
1/2 teaspoon crushed red pepper
3 Kirkland Signature plain bagels
2 medium tomatoes
1 bunch asparagus, blanched and
cut into 2-inch pieces
12 ounces small fresh mozzarella
1/2 red onion, thinly sliced
6 leaves fresh basil, cut in thin strips
Preheat oven to 375°F.
Cut bagels in half, then cut each half into 6 wedges. Spread in a pan and bake
for 8-10 minutes, or until lightly toasted. Remove from the oven and let cool
for 5-10 minutes.
To prepare the dressing, combine all ingredients in a blender and puree.
For the salad, cut tomatoes in half, then cut each half into 8 wedges. In a large
bowl, combine tomato wedges, asparagus, mozzarella, onion, basil and bagel
wedges. Add the dressing and stir to blend. Makes 8-10 servings.
