Grilled Open-Faced
Mediterranean Sandwiches
Chicken of the Sea
1/4 cup light mayonnaise
1/2 tablespoon
prepared pesto
Dash of crushed red pepper
1 7-ounce can Chicken of
the Sea* chunk light tuna
in water or solid white
tuna in water, drained
1/4 cup vinaigrette dressing
4 slices sourdough bread
1 cup jarred roasted bell
peppers, drained
1 1/3 cups 1/2-inch sliced
eggplant, grilled
1 1/3 cups 1/2-inch sliced
zucchini, grilled
1/2 cup sliced pepperoncini,
drained
1 cup shredded 3-cheese
Italian blend
4 small sprigs fresh basil,
for garnish
Preheat the broiler.
In a resealable container, combine mayonnaise,
pesto and red pepper.
In a bowl, gently mix tuna with vinaigrette.
For each sandwich, place a slice of bread on a foil-lined baking sheet. Spread pesto mayonnaise on the
bread. Layer each sandwich with 1/4 cup roasted bell
peppers, about 5 slices each eggplant and zucchini,
about 1/3 cup tuna mixture, pepperoncini (about 4-5
rings) and 1/4 cup shredded cheese.
Broil for 2-3 minutes, or until the cheese has melted.
Garnish with basil sprigs and serve immediately.
Makes 4 servings.
Tip: This can also be served as an appetizer on French
bread; just reduce the toppings accordingly.

4 Orca Bay* frozen mahi
mahi portions, thawed
1/2 cup all-purpose ;our
1/2 teaspoon sea salt
2 eggs
3/4 cup Italian-seasoned
dry bread crumbs
2 tablespoons butter,
melted
4 soft hamburger buns or
hoagie rolls
4 slices American cheese
4 tablespoons tartar sauce,
or to taste
Oven-Baked Mahi Mahi Sandwiches

Preheat oven to 375°F. Coat a baking sheet with
cooking spray.
Pat dry the thawed mahi mahi with paper towels.
Combine ;our and salt in a shallow bowl. Beat eggs
in a second bowl. Place bread crumbs and melted
butter in a third bowl and mix until blended.
Dip the ;sh in the ;our, turning to coat evenly; remove
excess ;our. Dip in the eggs, coating evenly. Dip in the
buttered bread crumbs, turning to coat evenly. Press
the crumbs into the ;sh, tapping o; excess.
Place the ;sh on the baking sheet. Spray the ;sh
generously with cooking spray.
Bake for 18-22 minutes ( 145°F internally). Remove
from the oven.
Preheat the broiler on high. Toast insides of hamburger
buns until golden brown.
Place a slice of cheese on each ;sh portion. Broil until
the cheese melts. Transfer to the buns, top with tartar
sauce, add bun tops and serve. Makes 4 servings.
