Rum Cake with Granola Streusel

1 18 1/2-ounce package yellow
cake mix
1 3.4-ounce package instant
vanilla pudding
4 eggs
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup light or dark rum
1 cup coarsely chopped Kirkland
Signature granola snack mix
Sweetened whipped cream,
for serving
Preheat oven to 325°F. Grease and lightly flour a 10-inch tube or 12-cup springform pan.
In a large bowl, combine cake mix, pudding mix, eggs, water, oil and rum. Beat until
well blended.
Pour half of the batter into the prepared pan. Sprinkle with granola. Pour the remaining
batter over the granola streusel.
Bake for 1 hour, or until a tester inserted in the center comes out clean. Let cool in the
pan on a wire rack.
Serve with a dollop of whipped cream. Makes 12-16 servings.
