Burrata Cheese, Cherry Tomato
and Pesto Appetizer

4 1/2-inch-thick slices La Brea
Bakery* Demi Baguette
Olive oil
6 cherry tomatoes, quartered
1 tablespoon extra-virgin olive oil
2 tablespoons basil pesto
1 garlic clove, finely minced
Sea salt
4 1/2-inch-thick slices burrata
cheese (see note)
Preheat oven to 350°F.
Brush each slice of bread with olive oil on both sides. Place on a baking sheet and
toast in the oven for 15-20 minutes, or until light golden brown.
In a medium bowl, combine tomatoes, extra-virgin olive oil, pesto and garlic. Mix
and season to taste with salt.
Place a slice of burrata on each slice of bread. Top with the tomato mixture.
Makes 4 servings.
Note: Burrata is a fresh Italian cheese made from mozzarella and cream. If it is not
available, substitute fresh mozzarella.
