Spicy Mussels in Adobo Sauce

2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced red bell pepper
1 tablespoon chopped garlic
1 7-ounce can chipotle peppers in
2 pounds North Coast Seafoods*
PEI rope-grown mussels
1 cup white wine
2 tablespoons butter
1 tablespoon chopped fresh cilantro
Salt and pepper
In a large pot, heat oil over medium-high heat. Add onions, bell peppers and garlic;
cook for 3-4 minutes, or until soft.
Add some chopped chipotle peppers with the adobo sauce, the amount depending on
how spicy you want the dish ( 1 pepper and 1 tablespoon of sauce will yield a spicy
bowl of mussels). Cook for 2-3 minutes.
Add mussels and wine, stir everything together and cover the pot. Cook for about
4 minutes, or until the mussels have opened.
Add butter and cilantro, mix well and adjust seasoning with salt and pepper.
