Broccoli and Cauliflower Salad

1 head of broccoli, cut
into bite-size pieces
( 2 1/2 cups)
In a large bowl, combine broccoli, cauliflower,
cucumber, tomatoes, olives and cheese. Add enough
dressing to coat and toss.

black olives, drained

In a deep saucepan, bring 1 inch of water to a boil.
Place broccoli in a steamer basket, add to the saucepan,
cover and steam for 5 minutes, or until tender but
still crisp. Transfer broccoli to a large bowl and
let cool.
In a small bowl, combine oil, garlic, lemon peel, lemon
juice, honey and thyme. Add salt and pepper to taste.
Once the broccoli is cool, add the dressing, prosciutto,
Parmesan and pine nuts; stir to combine.
