Ramen Olé Soup
Top Ramen
4 cups water
1 cup cubed cooked
turkey or chicken
1 3-ounce package
Nissin Top Ramen
Chicken Flavor
1 cup shredded lettuce
1/4 cup chopped
green onions
1/4 cup thinly sliced
radishes
1/2 cup chopped
fresh tomatoes
In a saucepan, bring water to a boil. Add turkey or
chicken pieces.
Break noodles before opening the ramen package.
Add noodles to the water and cook for 3 minutes.
Add the flavor packet to the pan and stir.
Divide the soup between 2 bowls. To each serving
add lettuce, green onions, radishes, tomatoes and
cheese. Sprinkle lightly with crushed oregano and
top with your favorite hot sauce.
Serve with warm tortillas or tortilla chips.
Makes 2 servings.

Melt butter in a large soup pot over medium heat.
Add onions, celery and carrots; sauté until the onions
are translucent.
Add flour, coconut milk and curry paste; cook for 5
more minutes.
Add chicken broth, mix well and bring to a boil.
Simmer, uncovered, for about 30 minutes.
Add apples, rice, chicken, salt and pepper to taste,
and thyme. Simmer, uncovered, for 15-20 minutes,
or until the rice is done.
When serving, add hot cream. Makes 10 servings.
