Mashed Yams with
Marshmallow Butter

This dish is a delicious complement to Tony Roma’s ribs.
2 pounds yams
1/2 cup heavy cream
1/4 cup finely chopped
fresh sage
1/4 cup maple syrup
3 tablespoons butter
Salt and pepper
Mini marshmallows,
for garnish
MARSHMALLOW
BUTTER
1 cup mini white
marshmallows
1/2 cup chopped pecans
1/4 cup butter
2 tablespoons orange juice
Pinch of cayenne pepper
Peel yams and cut into 3-inch chunks. Cook in a large
pot of boiling salted water until tender, 20-25 minutes.
Drain well, then return the pot to the stove over low
heat for 1 minute to dry the yams.
Meanwhile, prepare the marshmallow butter: In a
microwave-safe dish, combine marshmallows,
pecans, butter, orange juice and cayenne pepper.
Microwave on high for 1-2 minutes, or until the
marshmallows have softened and the butter is
melted. Stir the mixture to blend.
Mash the yams. Beat in cream, sage, maple syrup,
butter, and salt and pepper to taste.
Top each serving of yams with a dollop or two of
marshmallow butter. Garnish with mini marshmallows. Serve with Tony Roma’s ribs. Makes 6 servings.
Almond Sausage Stuffing
Paramount Farms
1 one-pound loaf Pugliese
or country-style bread,
cut into 3/4-inch cubes
Preheat oven to 450°F.
3 cups low-sodium
chicken broth
In a large bowl, combine bread and chicken broth;
mix gently to moisten the bread.
1 pound Italian sausage,
bulk or removed
from casings
1 cup chopped onions
2 tart apples, cored
and diced
2 teaspoons poultry
seasoning
In a large skillet over high heat, cook sausage, breaking it up with a spoon into pieces no bigger than 1/2
inch, about 5 minutes or until lightly browned. Add
onions, apples and poultry seasoning; cover and cook
over medium-high heat, stirring occasionally, for 5
minutes, or until the onions are soft. Uncover, turn
the heat to high and cook about 5 minutes more,
stirring often, until the juices evaporate and the
mixture begins to brown.
1/2 cup chopped
fresh parsley
3/4 cup Almond Accents*
Original Oven Roasted
Add the sausage mixture, parsley and 1/2 cup
Almond Accents to the bread; mix well and season
to taste with salt and pepper.
Flavored Sliced
Almonds, divided
Salt and black pepper,
as needed
Spoon the stuffing into a 13-by-9-inch casserole dish;
sprinkle with remaining Almond Accents. Bake for
about 25 minutes, or until lightly browned.
