Tilapia with Olives,
Capers and Chilies
2 cups tomato sauce
1/2 cup green Sicilian olives
2 tablespoons capers
1 teaspoon dried red chili flakes
1 cup white wine
1/4 cup white wine vinegar
1 teaspoon sugar
2 fresh Tropical Brand* tilapia fillets
Salt and pepper
Extra-virgin olive oil
Crusty bread, for serving
Preheat oven to 450°F.
In a saucepan, combine tomato sauce, olives, capers, chili flakes, wine, vinegar and
sugar. Bring to a boil, and then turn off the heat.
Season fresh tilapia fillets with salt and pepper to taste. Place in a baking dish and
spoon all the sauce over them.
Bake for 8-10 minutes, or until the fish is cooked through.
Serve on a warm platter with a drizzle of good olive oil and some crusty bread.
