Tilapia with Tropical Fruit Sauce

TROPICAL FRUIT SAUCE
Preheat oven to 375°F.
1/2 cup orange marmalade
1/4 teaspoon minced
fresh ginger
1/3 cup coconut cream
1 tablespoon light rum
1/4 cup plus 2 tablespoons
pineapple juice
1 tablespoon diced
red onion
1 tablespoon diced red
bell pepper
1 tablespoon cornstarch
1/4 cup diced pineapple
1/4 cup diced mango
1/2 teaspoon dried parsley
1/4 teaspoon salt
To prepare sauce, combine marmalade, ginger,
coconut cream, rum, 1/4 cup pineapple juice, onion
and bell pepper in a medium saucepan. Heat to a
simmer, whisking. Mix cornstarch with 2 tablespoons
pineapple juice; add to sauce and simmer until
thickened. Add pineapple, mango, parsley, salt
and pepper. Let cool.
Lightly coat tilapia with cooking spray. Bake until
flaky ( 8-10 minutes). Cut each fillet into 2-3 pieces
and place on top of your favorite salad. Top with
sauce. Makes 4 servings.
Tip: A salad made of spinach, julienned red onion,
diced mango and diced tomato, topped with a light
dressing, complements the tilapia.

Toasted Crumb Tilapia
In a glass pan, combine orange juice, ginger, and salt
and pepper to taste. Add tilapia fillets and marinate,
refrigerated, for 60 minutes.
Preheat oven to 400°F.
Chop the veggies into medium-size chunks and place
in a roasting pan. Add oil and toss to coat. Season to
taste with salt and pepper. Roast for 30 minutes, or
until tender. Keep warm.
Place the tilapia in a baking pan and pour the marinade
over it. Bake for 15 minutes, or until just opaque in
the center.
Serve the tilapia with the veggies and garnish with
shredded orange peel. Makes 4 servings.
