Sweet Pear Chicken with Dates

1 teaspoon vegetable oil
4 boneless, skinless chicken breasts
11. 5 ounces pear nectar, divided
1 teaspoon cornstarch
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Dash of ground allspice
Dash of ground white pepper
3 ripe California Bartlett pears,
peeled, halved and cored
6 fresh Bard Valley Medjool Date
Growers Medjool dates, cut
in half and pitted
1/2 cup sliced green onions
Stir 1/4 cup pear nectar into cornstarch; set aside. Pour remaining nectar into the
skillet with the chicken. Add spices and pepper. Cover and cook over low heat for
10 minutes.
Add pear halves, cut-side down, and continue cooking, covered, for 10-15 minutes
or until a meat thermometer inserted in the center of the chicken registers 165°F
and the pears are tender. Remove the chicken and pears to a serving platter.
Add cornstarch mixture, dates and green onions to the pan; heat, stirring, until the
sauce thickens. Spoon some sauce over the chicken, and serve the remainder on
the side. Makes 4 servings.
Tip: The fresh fruits in this low-fat recipe provide a shot of fiber and antioxidants
to a main course. Enjoy the sweet flavor.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and brown
well on both sides, about 10-12 minutes. Drain off any excess fat.
