2 large Vie de France* butter croissants
Dijon mustard
BÉCHAMEL SAUCE
2 tablespoons butter
4 ounces Black Forest ham, sliced
4 ounces Gruyère cheese, sliced
1 tablespoon butter

Gruyère cheese
2 tablespoons grated
Parmesan cheese
2 tablespoons flour
1 cup milk
Pinch of ground nutmeg
Kosher salt and freshly ground
black pepper
Increase the heat to medium-high and boil until it thickens. Season to taste with salt
and pepper. Set aside.
Preheat the broiler.
Slice croissants in half horizontally. Lightly spread mustard on bottom halves. Top
with ham and Gruyère slices. Cover with the croissant tops.
Melt butter in a skillet over medium-high heat. Add sandwiches and cook for about
2 minutes on each side, or until lightly browned. Transfer to a baking sheet.
Spoon the béchamel over the sandwiches, then top with grated cheeses. Broil until
the cheese begins to brown, about 2 minutes. Makes 2 servings.

cook, stirring, for 1 minute. Slowly add milk, whisking constantly. Add nutmeg.
