Greek Turkey Burgers
with Spiced Yogurt Sauce

1 pound ground turkey
1/2 cup reduced-fat
feta cheese
2 teaspoons McCormick
oregano leaves
1/2 teaspoon McCormick
thyme leaves
1/2 teaspoon McCormick
ground black pepper,
plus more to taste
2 teaspoons olive oil
1/4 cup plain low-fat yogurt
McCormick ground cumin

In a large bowl, mix ground turkey, feta, oregano,
thyme and 1/2 teaspoon pepper. Shape into 4 patties.
Heat oil in a large nonstick skillet on medium heat
until hot. Add the patties and cook for 4-5 minutes on
each side, or until the burgers are cooked through
(internal temperature of 165°F).
To prepare the sauce, season yogurt to taste with
cumin, sea salt and pepper.
Serve the burgers on toasted rolls. Top each burger
with 1 tablespoon of the yogurt mixture. Garnish
with desired toppings. Makes 4 servings.

Pork Burgers on Focaccia
with Cheddar and Arugula
Tillamook
4 teaspoons butter,
softened
Preheat the broiler.
4 3-by-3-inch squares
focaccia bread, cut in
half horizontally
1 pound ground pork
Salt and pepper
1 teaspoon olive oil
4 slices Tillamook Medium
Cheddar Cheese
1/4 cup prepared
olive tapenade
1/2 cup roasted red
peppers cut in
1/4-inch-wide slices
1 cup baby arugula
Butter focaccia halves and toast under the broiler,
butter side up, until golden. Set aside.
Gently form meat into four 1/2-inch-thick patties.
Season to taste with salt and pepper.
Heat a skillet or grill pan over medium-high heat; add
oil and swirl to coat the pan. Cook the patties for 4
minutes on each side, or until a thermometer inserted in the center reads 160°F. Top each patty with a
cheese slice. Turn off the heat and cover until the
cheese melts.
Spread 1 tablespoon of tapenade on the bottom half
of each focaccia. Place a patty on each and top with
equal portions of red peppers and arugula. Top with
the remaining focaccia halves and serve immediately.
Makes 4 burgers.
