Lime Cilantro Guacamole

2 ripe avocados, halved
and pitted
Juice of 1 medium

1 teaspoon chili powder
1 jalapeño, minced
1/2 cup chopped
fresh cilantro
1/2 teaspoon minced garlic
1/2 teaspoon salt
Black pepper to taste
BURGERS
2 pounds lean
ground beef
Juice of 1 medium

1/2 cup diced onion
1/2 cup diced tomato
6 slices Monterey
Jack cheese
6 hamburger buns
Preheat the grill to medium.
To prepare the guacamole, scoop the avocado flesh
into a bowl and mash. Add all remaining ingredients
and mix until well blended.
To prepare the burgers, combine ground beef, lime
juice, garlic, onions and tomatoes in a bowl; stir to
blend. Shape into 6 patties.
Grill the burgers until cooked to taste. Add a slice
of cheese to each burger during the last minute
of cooking.
Toast the hamburger buns.
Serve the burgers on the toasted buns with a spoonful
of guacamole on top. Makes 6 servings.

Chicken, Apple and
Basil Sausage Patties
Pennsylvania Apple/New York Apple
1 tablespoon olive oil
1 1/2 cups finely chopped,
unpeeled Eastern*
Jonagold apples
1/2 cup finely chopped
sweet onion
2 small garlic cloves,
minced (about
3/4 teaspoon)
1/3 cup very finely
chopped fresh basil
1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon ground
coriander
1/4 teaspoon freshly
ground black pepper
1 1/2 pounds ground
chicken or turkey
(white and dark meat)
Heat oil in a medium skillet over medium-high heat.
Add apples and onions. Cook for about 2 minutes, or
until nearly tender, stirring occasionally. Add garlic;
cook for 30 seconds. Transfer the mixture to a large
bowl and let cool to room temperature.
Stir basil, sage, salt, coriander and pepper into the
apple mixture. Add ground chicken; mix with hands
until just combined (do not overwork). With damp
hands, form into sixteen 1/2-inch-thick patties.
Transfer to a tray or baking sheet lined with plastic
wrap. Cover and refrigerate or freeze until ready
to use.
Heat a nonstick skillet over medium heat. Add patties
and cook for 6-8 minutes, or until an instant-read
thermometer inserted near the center reads 165°F,
turning the patties over halfway through cooking.
Drain on paper towels. Makes 8 servings.
Tip: You can freeze the patties for later use. Thaw
them in the refrigerator.
