Orange Crumb Cake
Tropicana
1 cup all-purpose flour
1/2 cup sugar
Preheat oven to 350°F. Grease and flour an 8-inch
square baking pan.
4 tablespoons butter, at
room temperature
1 teaspoon ground
cinnamon
1 teaspoon baking powder
Dash of salt
1 large egg
1/2 cup Tropicana*
orange juice
1 teaspoon finely grated
orange peel
In a bowl, combine flour, sugar and butter with
a pastry blender or fork until the mixture
resembles meal.
Measure 1/2 cup of the crumb mixture and move to
a separate cup or bowl. Blend in the cinnamon.
Set aside.
To the main crumb mixture add baking powder and
salt; blend well.
Beat egg with orange juice until well blended. Stir
with grated orange peel into the crumb mixture just
until the dry ingredients are moistened.
Pour the batter into the prepared pan. Sprinkle the
reserved cinnamon-crumb mixture over the batter.
Bake for 20-25 minutes, or until a toothpick or cake
tester inserted in the center comes out clean.

Spread butter evenly over the bottom of a round
8-inch cake pan; dust with flour.
Prepare the cake batter according to package directions.
Arrange fruit decoratively in the prepared pan. Drizzle
with 2 tablespoons of the melted preserves. Spoon
the cake batter evenly over the fruit. Tap the pan on
the counter to distribute the batter evenly.
Bake until the center of the cake springs back when
gently pressed, about 35 minutes. Cool the cake in
the pan on a rack for 10 minutes. Loosen the edges
and invert onto a serving plate.
Heat the remaining preserves; drizzle over the cake.
Serve with whipped cream or ice cream, if desired.
