Apple Crab Salad
1 pound fresh crabmeat
1 large Yakima Fresh* Red Delicious
apple, cored and thinly sliced
1 cup whole pecans
1 cup red seedless grapes
Gorgonzola cheese, crumbled,
3/4 cup mayonnaise
1 cup light sour cream
Red leaf lettuce, for serving
Parsley sprigs, for garnish
Combine crabmeat, apple, pecans, grapes and cheese in a bowl.
In another bowl, combine mayonnaise and sour cream; stir until well blended. Stir
into the crab mixture. Chill at least 2 hours before serving.
Serve on a bed of red leaf lettuce, garnished with parsley sprigs. Makes 6-8 servings.
Tip:;Lemon slices or wedges can also be added for garnish.
