Spinach, Apple and Pecan Salad

2 tablespoons olive oil
1 1/2 tablespoons cider vinegar
1 tablespoon prepared mustard
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 bag Prize Slice* apple slices, cut
into bite-size pieces
1/4 cup thinly sliced red onion
1 pound Boskovich Farms* Fresh ‘n’
Quick spinach, leaves torn
1/2 cup toasted pecans
In a large serving bowl, whisk together oil, vinegar, mustard, sugar, salt and pepper.
Just before serving, add apples, onion, spinach and pecans. Toss until well coated
with dressing. Makes 4 servings.
