Wild Rice-Apple Pilaf
1/4 cup uncooked wild rice
1 teaspoon olive oil
2 tablespoons chopped onion
2 1/4 cups fat-free, low-sodium
1 cup peeled, diced Holtzinger*
Fuji or Golden Delicious apple
(about 1/4 pound)
2/3 cup uncooked long-grain
2 tablespoons chopped dried apple
1/2 teaspoon salt
Wash wild rice in 3 changes of hot water; drain and set aside.
Heat oil in a saucepan over medium heat. Add onion and sauté for 3 minutes.
Add wild rice, chicken broth, apple, brown rice, dried apple and salt; stir well.
Bring to a boil, then cover, reduce heat and simmer for 1 hour and 10 minutes,
or until the liquid is absorbed. Makes 4 servings.
