Picnic Rice Salad with Fresh Fruit
The Oppenheimer Group/Sunny Valley International
½ cup plain yogurt
2 tablespoons lemon or lime juice
2 tablespoons honey
3 cups cold cooked white rice
1 Eastern ripe peach, peeled and diced
1 navel orange, peeled and diced
1 cup black or red seedless grapes, halved
¼ cup roasted sliced almonds
¼ cup chopped fresh mint (optional)
In a large bowl, combine yogurt, lemon or lime juice and honey; mix well.
Stir in rice. Gently fold in peaches, oranges and grapes. Add salt to taste.
Cover and refrigerate until ready to serve. Garnish with almonds and mint
just before serving. Makes 5-6 servings.
