Tomato and Roasted Garlic

¼ cup olive oil
4 tablespoons roasted garlic
½ teaspoon crushed red pepper
4 whole Dungeness crabs, cooked,
cleaned and cracked
2 tablespoons chopped fresh
basil, divided
2 tablespoons chopped fresh
parsley, divided
4 fresh tomatoes, diced
1 tablespoon tomato paste
Preheat oven to 450°F.
Heat oil in a large, heavy ovenproof roasting pan over medium-high heat.
Stir in garlic and red pepper. Add crabs. Sprinkle with half the herbs and
the diced tomato. Stir to combine.
Place the pan in the oven and roast the crabs until heated through, stirring
once, about 12 minutes.
Using tongs, transfer the crabs to a platter. Add tomato paste to the pan
and heat through to thicken the roasting juices.
Spoon the sauce over the crabs. Sprinkle with the remaining herbs and
serve. Makes 4 servings.
