Cheesy Veggie Sausage Breakfast Casserole

8 large eggs, lightly beaten (see note)
1 cup cottage cheese
¼ cup milk
1 teaspoon dried oregano leaves
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon ground pepper
1 10-ounce package frozen chopped
spinach, thawed and well drained
1½ cups ( 6 ounces) shredded
Cheddar or mozzarella cheese

Sausage Breakfast Patties,
thawed and crumbled
½ cup sliced green onions
8 cherry tomatoes,
for garnish (optional)
8 fresh parsley sprigs,
for garnish (optional)
Preheat oven to 325°F. Coat a 13-by-9-by-2-inch baking dish with cooking spray.
In a large bowl, beat together eggs, cottage cheese, milk, oregano, garlic powder,
salt and pepper.
Squeeze excess moisture out of spinach. Add spinach, cheese, breakfast patties
and green onions to the egg mixture and stir to blend. Pour into the prepared pan.
Bake for 35-40 minutes, or until set. Let stand for 10 minutes before serving. Cut
into squares to serve. Garnish with tomatoes and parsley. Makes 8 servings.
Note: For a low-cholesterol version, replace the 8 eggs with 2 cups of refrigerated
egg substitute.
