2 cups Italian-;avor dry bread crumbs
2 tablespoons Kirkland Signature grated
plus more for topping
2 Kirkland Signature organic large eggs
½ cup ;our
¼ teaspoon Kirkland Signature pure sea salt

Preheat oven to 350°F. In a large bowl, mix bread crumbs with Parmigiano-Reggiano. In a shallow
bowl, beat eggs. On a large plate, mix ;our with salt and pepper.
Pound chicken breasts between sheets of plastic wrap to ¼ inch thickness. Coat the breasts evenly
with ;our, shaking off excess. Dip into the eggs. Coat evenly with bread crumbs. Set on waxed paper.
In a nonstick skillet, heat ¼ inch of oil to 350°F. Place single breast in the skillet and sauté for 2
minutes on one side, 1 minute more on the other side. Remove with a slotted spatula and drain on
Place sautéed cutlets in a baking dish and cover each breast with 1 slice of mozzarella and marinara
sauce. Sprinkle with Parmigiano-Reggiano. Bake for 10 to 15 minutes, or until the sauce and cheese
start to bubble.
Serve with pasta and garlic bread. Makes 8 servings.
