Cuban Pork Tenderloin SERVES 12
1/2 cup fresh orange juice
1/2 cup fresh grapefruit juice
1/4 cup chopped cilantro
2 tsp. cumin
2 tsp. dried oregano
4 garlic cloves, finely chopped
1 tsp. kosher salt
1 tsp. red pepper flakes
3 lbs. pork tenderloin ( 2 Costco tenderloins)
Mix all ingredients except pork in bowl and divide evenly into 2
gallon-size zip-top plastic bags. Add 1 tenderloin to each bag,
close, and refrigerate at least 30 minutes, up to 4 hours.
Prepare outdoor grill for direct medium-hot grilling. Lightly oil
cooking grate. Remove pork from marinade, drain briefly, but do not
scrape off solids. Place pork on grill and close grill lid. Cook, turning
occasionally, until browned and internal temperature of pork on a meat
thermometer measures between 145ºF (medium rare) and 160ºF (medium),
about 20 to 27 minutes. Transfer to carving board and rest 3 to 5 minutes.
Cut on slight diagonal and serve.
Perfect Pulled Pork SERVES 16-20
1 1/2 tsp. smoked paprika
2 tsp. black pepper
1 tsp. cayenne pepper
1 tsp. dried thyme
1 tsp. garlic powder
1/2 tsp. salt
5 lbs. boneless pork shoulder
1 cup water
Soft sandwich buns
Combine seasonings in small bowl and rub evenly over pork. Place meat in
6-qt. slow cooker. Add water. Cover and cook on low for 6 to 8 hours or high
for 4 to 5 hours, until pork is very tender. Remove pork to large cutting board
and let rest for 10 to 15 minutes. Pull, slice or chop. Serve on buns with
