“Anodized” means that the aluminum in
the cookware has been subjected to an
electrolytic process that controls natural
oxidation. A layer of oxide produced during the process hardens the aluminum
and makes it resistant to corrosion. Hard-anodized is an extension of this process,
resulting in even harder and more durable cookware.

PFOA PFOA is short for perfluoroocta-noic acid. This man-made compound was
used in the manufacture of nonstick coatings in years past. It was thought to have
a negative impact on health and the
environment, so most manufacturers of
nonstick coatings have removed it from
their manufacturing process.
INDUCTION COOKING Induction cooking uses electromagnetism to turn pots
and pans into cookers (creating heat
energy inside the pan itself, instead of
firing it in from outside), which cooks
food more quickly and safely with less
energy. This type of cooking is relatively
uncommon but is becoming more popular in the United States.

“This is a highly reinforced system that is
more durable than most of the competing
brands,” Barberi says. While heat and abrasion can affect the coating on pans of lesser
quality, the Teflon coating is so durable that
the temperature of the dishwasher won’t
degrade its performance. Also, the coating is

Costco members can rest assured they
are buying among the best cookware on the
market. Costco has worked with the second-largest manufacturer of cookware in the
world since 1994. “What sets Kirkland Signature cookware apart from other brands is that
Costco stands behind the Kirkland Signature
name,” says Jim Klauer, senior vice president
of non-foods merchandising. “We offer competitive cooking performance at a substantial
value. Key national brands don’t want to put
their product next to ours for comparison.”
To this day, Costco buyers conduct factory audits and perform quality assurance
testing on all of the cookware to ensure each
piece meets the highest standards. Costco
buyers have also taken steps to make sure that
the cookware meets and exceeds the NSF and
NSF Home Product standards.
