Costco warehouses, along with a variety of foods
for preparing everything from snacks to show-stopping holiday meals.

IF YOU ASKED me to name some of the recipes
that I absolutely love, Chicken with Champagne and
40 Cloves of Garlic and Love Potatoes would definitely be on the list.
If you know me, you know I love garlic. There is
no such thing as too much garlic, which is why
Chicken with Champagne and 40 Cloves of Garlic is
one of my favorites. The combination of the garlic
and the subtleness of the Champagne pair really
well here. Adding Champagne brings out a nice flavor and an elegance that will impress any guest.
And then, everyone needs a go-to potato dish,
and Love Potatoes is mine. I love potatoes and all of
the different things that you can do with them, but
this recipe is my family’s favorite—and one that they
regularly request. It’s a combination of Lyonnaise
potatoes and hash browns.
Both recipes are in my newest book, Essential
Emeril, because they are such staples in my repertoire. This book is incredibly personal, and making
it was such a fun and rewarding experience. Essential
Emeril captures my food journey, starting with my
mom and highlighting the many experiences and
people who have influenced me along the way.
I chose a lot of the recipes for the book when I
was planning the 25th anniversary of Emeril’s, my
flagship restaurant in New Orleans, earlier this year.
Thinking back on all of the wonderful people I have
learned from and the dishes that I have made over
the years, I knew that I had to get them all down in
one place, and this book is it. I hope that you will
enjoy these recipes as much as I have and that you
too will have happy experiences in the kitchen surrounded by mentors, family and friends.
